Chicken Enchilada Crock Pot Soup
Hello and welcome to my favorite comfort food- any form of soup.
Most people believe there is “soup season” aka fall and winter. BUT... I believe anytime is soup season if you try hard enough, so here is a mid-spring soup recipe to satisfy your soup craving.
The great thing about this recipe is that it is very versatile and very easy to make. You can add or subtract ingredients and still finish with similar, and sometimes better results. Did I mention you just put it in the crock pot and it literally cooks itself???
Grocery List:
- Black Beans
- Pinto Beans
- Rotel's Diced Tomatoes & Green Chillies
- Old El Paso Green Enchilada Sauce
- Corn
- Cream Cheese
- Chicken Broth
- Chicken (Rotisserie chicken works really well)
- Onion
- Jalapeño
Optional Toppings:
- Cheese
- Sour Cream
- Tortilla Chips
- Lime

In my opinion, the real game changer of my soup recipe is the cream cheese. This makes the broth extra creamy and delicious.
Okay this is where it gets difficult...
Step 1: Add all the ingredients into the crock pot
Step 2: Set the timer on your crock pot
I usually set mine on low for 8 hours or high for 6 hours depending on how long I will be gone
Step 3: Come home to your entire kitchen smelling like soup
Step 4: Serve and add toppings
