Taco Tuesday: Breakfast Edition
Those who know me know that I LOVE Mexican food. This obsession probably stems from my mom's constant craving for Mexican food. Whenever I'm at home, we eat Mexican food in different varieties for almost every meal (Hi mom). This tradition has carried on and led me to one of my all time favorite food combinations, Breakfast Tacos.
Start by making eggs.
This combination of two of my favorite things, breakfast food and tacos, was created when I was 1. too lazy to go to the grocery store and 2. running out of groceries and food to eat.
I woke up in the morning ridiculously hungry so naturally I began browsing my sparsely stocked fridge and pulling out all the ingredients that sounded good. This resulted in every ingredient I had left on the counter next to the fridge including: bacon, avocados, beans, rice, cheese and tortillas (Write down these ingredients, these are what breakfast tacos dreams are made of).

I go through phases on preferring over easy or scrambled but here is my full proof recipe to making amazingly fluffy scrambled eggs.

I'm here to tell you that you're not wrong BUT... If you use sour cream instead you will create the fluffiest, most delicious eggs you've ever tasted.
So instead of milk, add about the same amount of sour cream and salt and pepper and then scramble the hell out of your eggs before cooking them on the stove.
Make sure not to overcook them, AKA do not cook until the eggs are brown- That's gross and eggs will actually continue to cook even after you pull them off the burner.
Add some yummy stuff.
As you have probably learned from my blog and cooking style, I use whatever I have in the fridge so my recipes vary every time I cook them. For these breakfast tacos, I recommend adding bacon or sausage, beans, rice and some of The Avo Queen's Super Secret Guacamole and of course minimum one kind of cheese.
Wrap it up.
Brown your tortillas on the stove before wrapping all these delicious ingredients up and quickly eating it before you miss you 9:30 a.m. class. #adulting
Go to the grocery store.
This step is for me, seriously, go to the store you have no food and your meal combinations are getting weird.
