Oktoberfest German Potato Cakes

It’s arguably the best time of the year! The leaves are changing, the air has a slight chill to it and it’s finally acceptable to pull out all your sweaters and boots. Happy fall everyone!! Let’s get #spooky with some Oktoberfest inspired potato cakes.

I was recently invited to my friend’s Oktoberfest party, so I pulled out my lederhosen fake tee-shirt and poured through my recipes for an appetizer to accompany me.

I was told I couldn’t make guacamole, because that wasn’t a German dish… So I channeled my German ancestors (and Google) to find an Oktoberfest inspired appetizer. I stumbled upon these potato puffs and thought they seemed like a quick, easy, tasty dish to impress the hosts and guests.

Grocery List:
Potatoes:
  • 5 pounds Yukon Golden Potatoes
  • 2 sticks of butter
  • 1 package of cream cheese
  • Butter Milk
  • Salt & Pepper to taste
Potato Cakes:
  • Cheddar Cheese
  • Parmesan
  • Bacon
  • 3 Eggs

To start off, (Monster) Mash some potatoes!
I DON’T mess around when it comes to mashed potatoes and I always make the Pioneer Woman’s Mashed Potatoes.
If you aren’t familiar with it, it’s the best/only way to make mashed potatoes.
I made 5 pounds so followed the recipe exactly but adjust ingredients according to how many pounds of potatoes you use.

Once I finished the (Monster) mashed potatoes, I assembled the ingredients.
This is where you grab your cheese (my fav), eggs and bacon.

1: Add as much cheese as possible
2: Add bacon, I used bacon bits instead of cooking real bacon to save time
3: Add three egg per 2 cups of potato
4: Spoon mixture into the greased muffin tin and top with parmesan cheese
Instead of a muffin tin, I used a smaller baking pan.
This was a great decision because it made the potato cakes extra crispy and bite-sized

5: Serve with sour cream
6: Count how many times you are asked for the recipe throughout the party.

The record to beat is 6.
